The recipe for spicy peanuts and dried fish
1. Rinse the dried small fish twice with running water, then soak it in warm water for about half an hour. Because this type of fish jerky is particularly salty, it would be much better to handle it this way.
2. Put a handful of peanuts in a cold pot with cold oil, then stir fry them back and forth over low heat until the peanuts make a popping sound. Remove and let it cool. Don't wait for the peanuts to change color before serving them out. This way, after they cool down, they will basically be in a burnt state.
3. Prepare other condiments: chop ginger and garlic into small pieces, cut scallions into chopped ones, remove the stems and seeds of red dried peppers, and cut them into thin strips for later use. If you particularly like spicy food, add more red dried peppers.
4. After soaking, rinse the dried fish twice and drain, then use kitchen paper to absorb any excess water on the surface.
5. Put the base oil of the peanuts you just fried into the dried fish, stir fry over low heat until the dried fish turns golden and crispy, and then take it out. Because dried fish still contains water, be patient when stir frying until the water evaporates.
6. Heat a little cooking oil in another pot, add Sichuan peppercorns and stir fry over low heat until fragrant, then remove and discard the peppercorns.
7. Then add scallions, ginger, garlic, and shredded chili peppers, stir fry over low heat until fragrant.
8. Add the stir fried fish jerky and stir fry evenly. Add two tablespoons of cooking wine and stir fry until the soup dries.
9. Finally, add the stir fried peanuts, sprinkle some sesame seeds, stir fry evenly, and serve.
10. A delicious spicy peanut fish jerky is ready. It can be served with Congee!
Tips
Although the dried fish has been washed and soaked, it is still quite salty, so there is no need to add additional salt. Peanuts need to be stir fried in advance, let them cool before they become crispy. Finally, wait for the soup in the pot to completely dry before adding peanuts.
