Recipe for Sour Radish Duck Soup
1. After buying it in the market, cut it into pieces, soak it in cold water for half an hour, pour it out and wash it clean, boil it in boiling water, pour it in and boil it, turn off the heat, soak it for 10 minutes, then scoop it up like I did,
2. Bring oil to a boil in a pot, then add scallions, ginger, garlic, and chili peppers. Stir fry until fragrant (if you don't like too spicy, you can skip chili peppers).
3. Go to the duck, collect 80-90% of the water, pour the wine into a spoon, use a lighter to light the wine, and then pour it onto the duck. The flame continues to burn and flip. Once the flame is extinguished, the fire can be turned off.
4. Prepare an appropriate amount of white water, add the duck, pour in pickled radish, bring to a boil over high heat, reduce heat, and simmer slowly for two to three hours.
5. After about 20 minutes, add salt, monosodium glutamate, chicken essence, which are all seasonings. (Soy sauce cannot be added!)
6. After serving, add cilantro and prepare a small bowl with millet pepper (the millet pepper and cilantro should be chopped into small pieces! This will make it more flavorful). Then, add some soy sauce and a piece of duck meat. Flip the bowl twice and stuff it into your mouth. It makes my mouth water.
