Practice of Braised pork belly with Radish
1. Prepare the required materials.
2. Fill the bowl with cold water, add a tablespoon of cooking wine, add pork belly, and soak for 15 minutes.
3. Blanch the pork belly in a hot pot and remove it.
4. After removing, let it cool and cut into even cubes. Put a little oil in the pot and slowly stir fry the pork belly over low heat.
5. Stir fry over low heat until the surface of the pork belly slightly changes color and oil is released. Pour out the excess oil and take out the pork belly for later use.
6. Wash the pot and add 1 tablespoon (15ml) of oil, then add rock sugar and cook until the color of the rock sugar solution darkens.
7. Pour in the fried pork chunks and stir fry evenly. Add cooking wine, light soy sauce, and dark soy sauce.
8. Stir fry evenly.
9. Add water that has not exceeded the amount of meat, bring to a boil over high heat, and skim off the foam. Add ginger, scallions, star anise, and cinnamon.
10. Put it into a clay pot and simmer over low heat (or cook directly in a wok).
11. When the meat is cooked until it is ripe (about 40 minutes), add chopped white radishes and cook together.
12. Stew until the carrots are soft and cooked, then turn to high heat to thicken the soup. Season with a little salt and sprinkle with scallions.
Tips
Soak the pork belly in cooking wine first to remove the fishy smell (or cut it into pieces and soak it), blanch it with water to remove any dirt on the surface.
Stir frying pork belly over low heat can extract some of the fat, and the meat I choose is relatively lean, so it won't taste greasy.
When stewing meat, add hot water.
The oil obtained from stir frying pork belly can be used to stir fry vegetables, mix noodles, etc. It is very fragrant.
You can also use white sugar for stir frying sugar, and if you find it troublesome, you can skip the step of stir frying sugar directly.
