Method for making yam, mushroom, pigeon soup
1. First, let's have a finished product image.
2. Prepare the ingredients as shown in the picture. (Wash and prepare one pigeon, cut long sections of scallions, add some Chinese yam, shiitake mushrooms, chickpeas, red dates, and a few goji berries).
3. Put pigeon cold water into the pot, add ginger, and blanch the scallions first.
4. After blanching, take it out and wash away the blood foam, then start another pot and add boiling water to continue boiling.
5. After boiling for 10 minutes, transfer to an electric sand pot and reduce the heat to medium low. Add the prepared red dates, goji berries, Chinese yam, Yizhi, and soaked shiitake mushrooms. Simmer on medium low heat for 1 hour.
6.After boiling for one hour, the aroma of pigeon soup is overwhelming. At this time, add an appropriate amount of salt and mushroom essence.
7. Sprinkle some scallions, serve them on a plate, and let someone enjoy them beautifully.
Tips
1. Blanch water to remove fishy odor, and add more ginger and scallions.
2. Add enough water to the soup at once, without adding water in the middle, otherwise the taste will not be good
To maintain the freshness and tenderness of the meat, it is necessary to add salt at the end.
4. This is only my family's practice. If there are any differences, please forgive me.
