Moderate amount of cornstarch
The method of braised bream
1, wash the fish clean, scrape off the black film inside, and make a few diagonal cuts on the fish. Both sides should be scratched for easy flavor absorption.
2. Prepare all the ingredients, including chopped scallions, chopped ginger and garlic, and chopped chili peppers for later use.
3. Prepare half a bowl of excess water, add soy sauce, oyster sauce, and salt, mix well and set aside,
4. Drain the fish and apply a thin layer of cornstarch on its surface,
5. Heat up the oil in the pan, a little more than usual when stir frying. After the oil is heated up, put the fish in the pan and fry over medium heat for about three minutes. Do not flip it randomly. After three minutes, switch to the other side and continue frying. Fry both sides of the skin until it is a little hard.
6. After frying both sides, gently scratch the fish aside and add ginger, garlic, chili and stir fry until fragrant,
7. Then add the prepared sauce and start cooking the fish,
8. After pouring in the sauce, add a little cooking wine and vinegar to the pot. Add scallion white and Lao Gan Ma fermented black beans (oil) and start boiling over high heat.
9.When the soup is half dry, turn the fish over and continue cooking.
10. When the soup has thickened and there is still a small amount left, it can be taken out of the pot,
11. Put the fish into a plate, pour the remaining soup over the fish, and garnish with some scallions.
Tips
Lao Gan Ma's fermented black beans, I only added the oil inside, but you can actually put the fermented black beans in it.
When flipping the fish, be sure to do it slowly and carefully to avoid breaking the fish meat.
If you don't like spicy food, you can remove the millet chili and leave it on.
Apply cornstarch on the fish before frying to prevent it from breaking easily.
