Recipe for Salted Fish and Eggplant Pot
Ingredients and materials
Salted fish, eggplant in moderation
Spicy oil, ginger and garlic powder in moderation
Scallion sections, Sichuan peppercorns, and red chili peppers in moderation

Recipe for Salted Fish and Eggplant Pot
1.Soak salted fish in cold water for five hours
2. Drink some cooking wine in the water.

4. Cut onions into slices and put them in a clay pot with the bottom of the pot
5. Boil the salted fish for one or two minutes
6. Remove and rinse thoroughly
7. Heat the pan and add salted fish to the oil
8. Fry until golden brown, then add Sichuan peppercorns, dry red chili peppers, and an appropriate amount of water, vinegar, white sugar, pepper powder, ginger, and garlic in order.
9. After boiling, simmer over low heat for five minutes
10. Put it into a clay pot filled with onions for later use
11. Install it for spicy oil
12. Wash the pot and add oil, then stir fry with bean paste and garlic until fragrant, resulting in red oil.
13. Add eggplant
14. Stir fry until the eggplant becomes soft, add water and a little chicken essence
15. Boil and put it into a sand pot with salted fish
16. Cover the sand pot with a lid and bring to a boil over high heat, then boil again. a minute
17. Turn off the heat and serve the scallions
18. Cover the lid and place it on the table
19. Open the lid and prepare to eat
Tips
If the salted fish is dry, it should be soaked in water first. If the salted fish is just made, it can be left without soaking in water. If you don't like spicy food, you can avoid spicy ingredients. The salted fish should be cooked before cooking, preferably until it is tender. Eggplants should not be boiled until tender, as it will lose its taste. You should leave some in a clay pot to cook the salted fish
