The method of cooking chicken wings with potatoes
1. Prepare the ingredients in the picture. Wash chicken wings, ginger, and scallions, peel and wash potatoes.
2. Cut potatoes into slightly thicker slices, shred ginger, and chop scallions.
3. Cut the chicken wings into two cuts on both sides (not too deep, mainly for better flavor).
4. Add 1 tablespoon of soy sauce and half a tablespoon of cooking wine to the chicken wings, mix well with ginger slices, and marinate for half an hour.
5. Put a little oil in the pot, pour in potatoes and fry until they are about 70-80% cooked (low heat, no need to add water).
6. After frying, put it on a plate for later use.
7. Put oil in the pot, pour in the chicken wings and fry (add the seasoning sauce and ginger slices together).
8. Fry until both sides of the chicken wings turn slightly yellow.
9. Inject an appropriate amount of water (add enough at once).
10. After the soup boils, pour in potatoes, add dark soy sauce, pepper sauce, and white sugar.
11. Simmer until the soup thickens and decreases, then add salt and stir fry evenly.
12. Collect juice over high heat. Add oyster sauce and stir fry well.
13. Transfer to a plate, sprinkle with chopped green onions and eat immediately.
Tips
1. Soak chicken wings in clean water for 2 hours, and change the water several times during the process (I soaked for half a day). If there is no time to soak, wash and blanch them before marinating. 2. Fry potatoes with only a little oil. 3. Chicken has its own fresh taste, so there is no need to add chicken essence or MSG separately. I made it fresh with white sugar.
