The recipe for braising prawns in oil
1. Wash the prawns, remove the shrimp whiskers, shrimp spears, shrimp feet, and sandline.
2. Pour in an appropriate amount of cooking wine and marinate for 10 minutes.
3. Prepare shredded scallions and ginger slices while marinating shrimp.
4. Mix light soy sauce, vinegar, white sugar, water, and dry starch, stir with a spoon until the white sugar melts and set aside.
5. Place the wok over high heat, use medium to high heat, and pour in slightly more Yuhuang oil and U-flavored peanut oil than usual for stir frying. Heat until 60% hot.
6. Pour in the prawns and fry until both sides turn red to produce shrimp oil. During this process, use a shovel to press down on the prawns to produce more shrimp oil.
7. Take out the fried prawns.
8. Leave the base oil in the pot, add ginger slices and shredded scallions and stir fry until fragrant.
9. Pour in the sauce.
10. Put in the prawns, pour in an appropriate amount of cooking wine, cover the pot with a lid, and simmer until the sauce is collected (about 3 minutes). Add a little salt and it can be taken out of the pot.
Tips
This dish should have a lot of soup, preferably less than half of the shrimp body. The oil braised shrimp made in this way is very flavorful, and the soup mixed with rice is also very delicious.
